I think playing in 3/4 time, when you're used to playing everything in 4/4 or playing 8 notes per measure, is more a rhythm thing than anything else, and the rhythm has to get into your head. Spend lots of time playing 3/4 backup: base note plus two pinches on the rest of the chords for the 3/4 feel, for the whole song in 3/4 time. After a while you will feel the rhythm and start putting a modest roll in place of the base note and pinches. From then on, when you've got the rhythm in your head, it becomes easier, and, after a while, a natural way to play.

Thanks Mikebanjo - that's a good idea for a starting point as I'll be singing the high part as well so I need to get that rhythm before I can start nailing the break.
