The first mushroom in the spring is the Turban Top (I think it is called so in English). The Latin name is Gyromitra esculenta. It is a delicacy but it is very poisonous. We use to taste it once a year and so far we have survived. First we dry it in the air in a shady place for some months. Then it has to be parboiled three times, and throwing the water after each time. Finally I cook it in cream (and not throwing away the cream). It is very delicious, and very good to reindeer toxin filet or moose filet or in an omelet.
If you don't dry it or parboil it you get poisoned because a toxin is formed during the digestion which can affect the liver, the central nervous system and the kidney. but i but it is very pois
