Jonty, congratulations on the Tamales !!! They look great and bet they didn’t suck!!! They are a PITA to make but can be a good team effort and fun if you have help. I haven’t made them in a long time , but I have all the fixins on hand and now I’m inspired.
I like to season my masa and make Rojo & Verde pork tamales. I make a pile of them as they freeze really well . I vac seal them and then reheat in the sous vide. Perfect way to reheat them.
Your pork Verde looks good too. Mrs. Slammer hates canned tomatillo sauce , so she makes her own roasting the onions and tomatillos and then makes the sauce. WINNER!!! Pork verde , beans , rice , and fresh tortillas is my favorite Mexican meal. I always judge Mexican restaurants on their refried beans. If the beans are great, everything else should be too.
Are you able to get Mexican cheeses on your side of the pond? Cotija cheese and queso fresco?

Slammer pizza
Well, it's not Sunday, and I'm not @slammer, but I made a pizza. Sorta fancy, sorta plain.
One impetus was to use up at least some of the phyllo dough I used for a chicken pot pie. The other reason was, well, pizza.
I think I forgot to include minced garlic and havarti cheese. Garlic is great but optional, and with the soft and gooey mozarella and minced and shredded salty parmesan I guess the havarti won't be missed. FYI havarti is a good substitute for moz, as it's a mild semi-soft cheese. I use it often with sandwiches and hamburgers.

Hey Liz, I’ve been jonesing for Pastitsio for a long time and waiting till we have family home as it’s too much for just two people, although it does freeze well.
Been making it for a long time and truly is one of my “Favorites “.
The thing that can make or break this dish is the amount of Nutmeg and Cinnamon that’s used. Too much and it’s ruined , too little is too late.
It’s a good time to buy or use only fresh spices and most definitely, grate the nutmeg yourself.
Finding just the right pasta for it is difficult where I live, and when I’m in New York or Minnesota , I get it at specialty shops. Large hole bucatini is my goto.
They make long Ziti, but it’s too thick for my liking. I’m not shy with my custardy bechamel either. Dammit, now I want Pastitsio.
Oh, and from many past experiences, please let it rest at least 20-30 minutes minimum, very important. Let us know how it goes and ENJOY!!!

Tonight was burger night. Best burger (non smash burger) I’ve had in a long long time!!!
Toasted Kaiser roll, med rare grilled 7 oz beef patty , American slice , blue cheese crumbles, shaved raw onions, sweet & heat pickles………..and crispy bacon!!!
A few roasted veggies and some onion rings to complete the menu.
Only thing missing was a big chocolate malt!!!

Made a huge 18 incher last night for Sunday pizza night. Sausage, mushroom & onion. I par baked the crust this time as lots of toppings can make it floppy. Nice thin crust with the integrity o stand up to the toppings. That’s as big of pie I can get in my oven!!! All made for under $10.00.

Sunday night on the job. I had a handful of Cheez-its, a can of green beans-liberally sprinkled with aseason-all, and a pre-cooked smoked porkchop, with a bottle of cold tea. Yep, livin' the dream on a remote jobsite, in a dirty-ol jobsite mobile unit. I actually found a light that worked in it! Hey, the microwave was new, eh. *This post not worthy of supporting pics! brad
