A new one for ol Slammer!!! I’ve been eating fresh water fish my whole life and eaten just about every species. I’ve caught Sheephead (Fresh Water Drum) my whole life and always throws em back, cuz that’s what I was told to do. Well, after hearing from a few people that they are good eating if cleaned and trimmed properly, I decided to keep a couple I caught.
Dammit, if it’s not one of the better eating fish there is!!! I would say it’s as close to Haddock as can be. Firm white flaky mild fish. Don’t know that I’d eat them out of a warm water lake, but these Lake Michigan monsters are delicious, and one of the best fighters I’ve encountered!!!
Why did it take me 60 years for this one? Who knew?

Monkfish with sweet onions
The recipe called for halibut but I had some monkfish in the freezer, so...
Saute a lotta thinly sliced sweet onion in a large pan with a little canola oil until they start to turn translucent or brown, then add a bunch of butter and a little white wine, salt, and white pepper, lower heat and simmer some more.
Put in a cazuela, lay the fish on top, and bake at 400F until done, 8-15 minutes.

I like monk fish. But have not noticed it in shops eateries in years?
We thawed out a package of skin on bone in chicken thighs. I seasoned the thighs, let em sweat a while, re-paper toweled and lightly oiled, then lightly seasoned again. I browned them on the hot side of the grill while the cherry wood chips were getting to smoke, then moved them to the cool side and cooked them to 170-180f while smoking and roasting at about 400f +/-. Result: a golden brown and crispy skin. *We had high winds and it kept blowing my gasser….Ahhh, Kansas! Served with rice and Asian marinated cucumbers..Brad
Kids went camping this weekend so I took the bike up to their spot. Best thing about camping is the food!
Hamburgers, brats, ribs, two kinds of potato salad, jalapeno poppers from a recipe that I suspect is used by the devil at first night mixers in his reception hall, thank goodness for PBR and homemade milkshakes.
Finish up with fireworks and sparklers for the kids and pudgy pies over the fire! Happy Independence Day to all!
