I posted this before & it deserves to go up again. if I can do it anyone can! A guy at work sat down in the lunchroom with a slice of this & I had to know more!

It's called Mediterranean Pie. The recipe is from The Best of Bridge. I'll add the recipe later instead of losing everything so far!
We've made it a half doz. times and here's what we tried. I eyeball a lot of stuff but remember it all has to fit in that !0" spring form pan!
You can use any kind of peppers to add up to 2 peppers.
You can use whole eggs or egg whites you can buy in a container.
Recipe says 12 oz Black forest ham. I go with 500gm. which is closer to 18oz. We just get the deli sliced.
Frozen spinach comes whole or chopped. Don't get chopped. It looks like what you clean out under your lawnmower! I cut a small hole in the corner of the bag & squeeze all the water out. This part is the biggest pain of the whole deal!
If you're grating a pound of mozzarella on a regular box grater like me depending how hard it is you might want to keep it cold .
i imagine being a U.S. recipe you can buy puff pastry in 14oz packages. Same with 10 oz. packages of spinach. That's where my eyeballing comes in. I rub the pan with a dab of butter on a paper towel (You'd think I owned a paper towel quicker pickerupper factory!)
Try to get the bottom crust in with no holes but just patch "em up if you do! It doesn't matter too much about the top & bottom join. I rub the inside of the bottom of the dough with butter too, Just crimp it up & fork in some steam holes.
We have quick read probe thermometer & I pull it at 160 degrees . Letting it set firms it up & makes it easier to pop out of the pan. Cook it on a cookie sheet.
The beauty of this is a quarter of this each with a salad is a great dinner for 2 with breakfast or lunch the next day with the leftovers.
The Bridge recipe isn't very spicy but you change the meat,cheese & peppers however you like!
I'd like to hear if anybody tries this!

Same old same old never gets old for me. French toast (and pancakes) is a means of conveying maple syrup to the mouth. (Challah bread this time.)
This is the proudest I’ve been of any meal I’ve ever had. Store bought frozen meatballs, store bought marinara sauce and spaghetti. I got called out the other day to help with a caver (spelunker) who’d taken a substantial fall. My wife was away so the kids were on their own so I asked them to sort themselves some dinner whilst I was out. It turned into quite a protracted incident so I was much later getting home than I’d imagined. I walked through the door cold and pretty muddy (but with bottle of wine in hand) into the kitchen to find a note on the counter - ‘’your dinner is in the microwave Dad - three minutes on full power’’
The kids had put themselves to bed a good while earlier, so I sat and ate that feast on my own - feeling like the king of the world.
For openness I just want to say that it’s not me hanging off the stretcher - the heroine in that picture is much lighter and prettier than I![]()

I bloody well will mate - thank you, that means a lot.
My son has been chief caterer this weekend. Started off with his take on a McMuffin - which was superb, and then he pulled out all the stops on dinner. I admit that I was there in an advisory capacity (well sat in a chair drinking beer) but he cooked everything 100% himself. Roast lamb, Yorkshire puddings, smashed potatoes and gravy from the pan drippings. It was bloody lovely!
